Ingredients (for 4 people):

  • 2 chicken fillets
  • 2 ripe avocados, sliced
  • 1 red bell pepper, in strips
  • 1 red onion, thinly sliced
  • 1 carrot, cut julienne
  • Fresh coriander leaves, for garnish
  • 4 tortilla wraps
  • Salt and pepper to taste
  • For the lime dressing:
    • 2 tablespoons of olive oil
    • Juice of 1 lime
    • 1 garlic clove, minced
    • 1 teaspoon of honey
    • 1/2 teaspoon ground cumin

Instructions:

  1. Preheat a grill pan or barbecue over medium heat.
  2. Sprinkle the chicken breasts with salt and pepper. Grill the chicken breasts for about 6-8 minutes on each side, until cooked through and with nice grill marks. Remove the chicken breasts from the grill and let them rest. Then slice the chicken.
  3. De-stone the avocado and cut it into slices. You can easily use our avocado cutter for this.
  4. In a bowl mix the slices of avocado, red pepper, red onion and julienne cut carrot.
  5. For the lime dressing: In a separate bowl, mix the olive oil, lime juice, minced garlic, honey and ground cumin. Stir well until the dressing is well mixed.
  6. Heat the tortilla wraps according to the instructions on the package.
  7. Place a tortilla wrap on a plate and divide a few slices of grilled chicken over the center of the wrap.
  8. Add a few slices of avocado and a handful of the vegetable mixture.
  9. Drizzle the filling with the lime dressing.
  10. Fold in the sides of the wrap and roll up tightly.
  11. Repeat this process with the remaining wraps.
  12. Cut the wraps in half and garnish with fresh coriander leaves.
  13. Serve the grilled chicken-avocado wraps immediately and enjoy a delicious and filling meal.
