The preparation time is about 15-20 minutes, depending on the grilling time of the peaches.

Ingredients (for 4 people):

  • 4 ripe peaches
  • 100 grams mixed lettuce of your choice (e.g. arugula, spinach, watercress)
  • 100 grams of fresh goat cheese
  • 50 grams almonds, coarsely chopped
  • 2 tablespoons of honey
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
Instructions:
  1. Preheat the grill to medium heat.
  2. Halve the peaches and remove the pit. You can perfectly use our fruit cutter for this. Lightly brush the peach halves on both sides with olive oil.
  3. Place the peach halves on the grill cut-side down. Grill them for about 2-3 minutes on each side, until they have nice grill marks and are slightly softened.
  4. Remove the peaches from the grill and let them cool slightly. Then cut them into thin wedges.
  5. In a large bowl, toss together the mixed lettuce, goat cheese, and chopped almonds.
  6. Make the honey vinaigrette by mixing the honey, olive oil, balsamic vinegar, salt and pepper in a separate bowl. Stir well.
  7. Pour the honey vinaigrette over the salad and mix everything gently so that the dressing is evenly distributed.
  8. Divide the grilled peach wedges over the salad and serve immediately.
