The cooking time of this recipe varies depending on the grilling and roasting time. In general, you can take into account the following time indication:

  • Preparation: 15 minutes (cleaning and marinating the shrimps, cutting the vegetables and making the marinade)
  • Grilling the vegetables: 10-15 minutes (depending on the desired doneness and grill intensity)
  • Grilling the shrimp skewers: 4-6 minutes (2-3 minutes on each side)

So in total you can count on about 30-40 minutes of preparation time before the dish is ready to serve. It's always a good idea to preheat the grill and griddle before you start so that they are up to temperature when you start grilling the ingredients.

Ingredients (for 4 people):

  • 500 grams large prawns, peeled and cleaned
  • 2 courgettes, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, cut into wedges
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 3 tablespoons of olive oil
  • 1 teaspoon paprika powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Freshly chopped parsley for garnish

Preparation method:

  1. Preheat the grill to medium heat.
  2. In a bowl, combine the garlic, lemon juice, olive oil, paprika, dried oregano, salt, and pepper. Stir well to make the marinade.
  3. Thread the shrimp onto skewers and place in a shallow dish. Pour half of the marinade over the shrimp skewers, making sure all shrimp are well coated. Set the skewers aside and let them marinate while you prepare the vegetables.
  4. Place the zucchini slices, red and yellow bell pepper cubes and red onion wedges on a baking tray. Drizzle the vegetables with the remaining marinade and season with salt and pepper.
  5. Place the baking tray with the vegetables under the broiler and roast for 10-15 minutes, or until golden brown and cooked through. Turn the vegetables halfway through the cooking time for even roasting.
  6. While the vegetables are roasting, heat a grill pan over medium heat. Place shrimp skewers on grill pan and grill for 2-3 minutes on each side, or until shrimp are pink and firm.
  7. Remove the roasted vegetables and shrimp skewers from the grill and place on a serving platter. Sprinkle with freshly chopped parsley for a nice finish.
  8. Serve the summer dish immediately and enjoy the delicious grilled shrimp skewers and roasted vegetables. You can also serve it with a fresh salad or some fresh bread.
