  • 200 grams of fresh spinach

  • 2 tablespoons of olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for topping

Instructions:

  1. Cook the orzo according to package directions in a large pot of lightly salted water. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, until the garlic is fragrant.
  3. Add the shrimp to the pan and cook for 2-3 minutes on each side, or until pink and cooked through.
  4. Add the fresh spinach to the pan and let it wilt, about 2-3 minutes.
  5. Add the cooked orzo to the pan with shrimp and spinach. Mix well.
